                          Coconut Lemon Squares

                        FILLING
   1 1/2  cups          all-purpose flour
     1/4  cup           sugar
     1/2  cup           butter -- softened
   2      teaspoons     grated lemon rind
                        CRUST
     3/4  cup           sugar
     1/2  cup           flaked coconut
     1/4  cup           butter -- softened
   2                    eggs
     1/4  cup           lemon juice
   2      teaspoons     grated lemon rind

1. In a mixing bowl, combine the crust ingredients and beat with an
electric mixer on low speed until the mixture resembles a coarse meal.
Be sure to scrape down the bowl to incorporate everything.

2. With floured hands, press the crust into a 9-inch square baking pan,
and bake in a 350 F. oven for 15 to 20 minutes, or until the edges are
lightly browned.

3. Mix the filling ingredients in the same bowl and blend on low speed
for about 2 minutes. Pour the filling over the crust, and bake at 350 F.
for 25 to 30 minutes, or until the filling is lightly browned and set.

Cool completely before cutting into bars.

                              Lemon Squares

   1      cup           melted butter
   2      cups          all-purpose flour -- plus 4 tablespoons
   1      cup           confectioner's sugar
   4                    eggs
   2      cups          sugar
   1      teaspoon      baking powder
   6      tablespoons   fresh lemon juice

1. Combine the butter, 2 cups of the flour and the confectioner's sugar.
Pat the mixture into a buttered 13 X 9 baking pan (it's best to coat
your hands with flour to do this step. Bake at 350 F. for 20 minutes and
set aside to cool.

2. Beat together the eggs, sugar, baking powder, remaining flour and the
lemon juice. Pour the mixture over the cooled crust and bake for an
additional 30 to 35 minutes at 350 F., until the filling appears set.

Wait for the mixture to cool, cut into squares and sprinkle lightly with
confectioner's sugar.
